The Gameplan : Korean Shortribs (Galbi) in Seattle

I’m all about the beef, especially when it’s Korean marinated shortribs aka “galbi”. So many factors come into play to make the perfect BBQ shortribs– the type of marinade, time to marinade, flame and heat source, fat content and meat quality. I love the all-you-can-eat places of L.A.; there are so many to choose from over there, but not in Seattle. Thus, putting together a definitive list of best all-you-can-eat Korean BBQ restaurants will be a hard affair– at least that will be another posting.

In the meantime, let’s talk about Korean shortribs.

In my opinion, the best marinades primarily consist of soy sauce, garlic, onions, sugar, salt, pepper, sesame oil, sesames, rice wine, and a fruit tenderizer like pear (I’ve even seen kiwi or Sprite used). Couple hours in the marinade, and you can pan fry, broil or grill to perfection.

Still looking for a definitive list of Korean restaurants with the best galbi of Seattle. Anyone have suggestions?
